Meat Loaf ‘Muffins’
From: Dietitians of Canada’s Cook Great Food
A great way to prepare this classic dish! It’s especially good for little-ones who love mini items made “just for me”. Also, it’s handy for freezing and re-heating in individual portions.
Ingredients
| 1.5 pounds | lean ground beef |
| 3/4 cup | oatmeal or dry bread crumbs or cracker crumbs |
| 1/4 cup | wheat bran |
| 1 can (5.4oz/ 160mL) | 2% evaporated milk |
| 1 | egg, beaten |
| 1 teaspoon | chilli powder |
| 1/2 teaspoon | garlic powder |
| 1/4 teaspoon | salt |
| ¼ teaspoon | black pepper |
| 1.5 cups | barbeque sauce |
Preparation
- Preheat oven to 375 degrees F.
- Grease a 12-cup muffin tin.
- In a large bowl, combine beaten egg, ground beef, oatmeal, bran, milk, chilli powder, garlic powder, salt and pepper. Divide mixture evenly among muffin cups, pressing down lightly.
- Spoon about 1 tablespoon of barbeque sauce over top of each muffin.
- Bake for 25 – 30 minutes or until meat is no longer pink in the centre.
Note: Pay very close attention to the evaporated milk. Note the size of the can (it's very small) and be sure that you're buying evaporated milk - NOT sweetened condensed milk.

I attended a picky eater's workshop with Kristen because both of my kids were not eating enough, or the right things, which resulted in visits to the Pediatrician.
